Roasted delicata squash

Serves 8

Striped delicata squash is the favorite of many cooks. Cut it up and roast it until it caramelizes at the edges; even the skins are tender. Make these in advance and reheat in a 400-degree oven for 20 minutes.

4 delicata squash, halved and seeded
Olive oil (for sprinkling)
Salt and pepper, to taste
1. Set the oven at 450 degrees.

2. Cut each squash half into 3 triangular pieces. In a small roasting pan, set the squash cut sides up. Rub the flesh with oil and sprinkle with salt and pepper.

3. Roast the squash for 35 to 45 minutes or until the flesh is tender when pierced with a skewer and the edges are caramelized. Sprinkle with more olive oil. Sheryl Julian
