South Boston Waterfront’s newest eatery slated to open Tuesday

The sweet smells of guacamole and carnitas will soon be filling the air along the South Boston waterfront, with the opening of the new Rosa Mexicano restaurant.

The high-end, national chain, started in 1984 in New York, will open its first New England restaurant at 155 Seaport Blvd. Tuesday.

“It’s really exciting,” said Darren Carbone, the restaurant’s executive chef. “They have a great reputation and it’s a growing company. It’s a really great opportunity to do traditional Mexican, but with local products.”

The new establishment, which boasts over 300 seats both indoor and out, has signed a 15-year lease for the space.

Blending the flavors of Baja and Boston, the restaurant looks to preserve traditional flavors of Latin cuisine while adding a unique twist.

“We are using local products but changing it up,” said Carbone. “The dishes are recognizable but the flavors are cleaner.”

The eatery is the latest step for the Waterfront, which in the past couple of years has seen an explosion of new restaurants, bars, and venues.

“It seems like the city really wants to explore that part of the city,” said Carbone, who use to be the executive chef of Fenway’s La Verdad. “Ten years ago there wasn’t a Waterfront, they were practically giving space away and now it’s the hot area. I didn’t realize how much is going on there. It’ll be exciting to see what it becomes.”

The restaurant will officially swing open its doors to the public May 8 and its grand opening will be held May 14. For more information about the menu, the hours, or directions, click here.
