After 25 years in Somerville, Redbones is about to bring its barbeque to Cambridge.
Redbones co-owner Rob Gregory said the Redbones Rib Shack could open as soon as tomorrow on Athenaeum Street at Linskey Way in Kendall Square next to a courtyard and site that houses a community ice skating rink in the winter.
Update: Redbones spokeswoman Anne Cushman said this afternoon that the Thursday opening for the Rib Shack has hit a snag that may take a few days to work out. A new opening date will be announced soon, she said.
Gregory said the only seating for the restaurant will be in the courtyard and the rib shack won’t offer the full Redbones menu. But it will serve up plenty of ribs, pulled pork, pulled chicken, beef brisket and sides.
“We’re going to give it a try,” Gregory said. “It’s a nice area.”
Gregory said he’s still working to get all of the needed permits from the city, and the opening of the Rib Shack, reported by the Bostonrestaurants blog, could be pushed back to Monday.
The new location comes about three weeks after Redbones launched a food truck that Gregory said has been doing very well serving customers in Boston around the John Hancock Tower who can’t get to Redbones in Davis Square for lunch.
For years, Gregory said people have suggested other locations for the southern-style restaurant, but he said he didn’t want to go just anywhere.
The Kendall Square location will be open from 11 a.m. to 5 p.m. Monday through Friday at first, and Gregory said eventually the restaurant may expand its hours.
