Find out at "Standard" Education: A Day of Classes, Tastings, and Demos. The event offers a peek at the brasserie's collaborative approach to staff training with six interactive sessions on sherry, cheese, wine, and more.

Demystifying Sherry - 11 a.m. Bar director Jackson Cannon offers a tasting of fortified wines from Spanish bodegas, an overview of the winemaking process, and tips on integrating sherry into cocktails.

Raw Food: Classic and Modern - noon. Take a walk on the raw side with executive chef Patrick Campbell, who will present classic and modern raw dishes including oysters, tatares, crudo, and carpaccio.

Vermouth Unveiled - 1 p.m. Beverage programs liaison Bob McCoy invites you to a hands-on walk through of the history of the spirit, including taste comparisons of dry Vermouth, sweet Vermouth, and ES's house-made rosé Vermouth.

The Wines of Sud-Ouest France - 2 p.m. Get schooled on the wines of Southwest France with wine director Colleen Hein, who'll offer tastings of familiar and lesser-known varietals.

Cheese As Dessert - 3:30 p.m. Cheese buyer Matt Baum demonstrates sweet and savory cheese choices to finish a meal. He'll also reveal what to look for when buying cheese, and how to create a cheese progression.

The Study of Scotch - 4:30 p.m. Assistant bar manager Naomi Levy goes in depth with Scotland’s native spirit, examining style, region and raw materials. Learn when and why people drink Scotch, how to taste spirits, and proper serving techniques.

All classes 50 minutes. Saturday, Feb. 8 at Eastern Standard Gallery Room, 528 Commonwealth Ave., Boston. $40 per class, $200 full day. Those who purchase three or more classes may add on a five-course dinner at Eastern Standard ($70 for food; $40 for optional beverage pairings) and/or an overnight stay at Hotel Commonwealth at a special rate ($169 plus taxes). 617-532-9100,
