Lobster Newburg over Puff Pastry Footballs

1/2 cup butter
4 tsp. flour
Seasoned salt to taste
White pepper to taste
1/8 tsp. nutmeg
1/2 tsp. Paprika
2 cloves fresh garlic, minced
2 cups light cream
6 egg yolks, slightly beaten
4 cups coarsely chopped boiled lobster
1 cup Cream Sherry (better flavor than regular Sherry!)
chopped, flat parsley
1 pkg. Frozen puff pastry
Serves 8 - 10

Melt butter in large pot, over medium heat. Stir in flour and continue cooking over medium heat until light golden brown. Add Cream Sherry and bring to heavy simmer until alcohol has evaporated. Add salt, pepper, nutmeg and paprika and garlic. Gradually stir in cream. Stir and bring just to a boil. Reduce heat and simmer, stirring 3 minutes longer. Stir a little hot mixture into egg yolks to bring them to temperature and avoid having the eggs scramble, then pour back into pot. Add lobster (FYI: most large grocery stores will now steam fresh lobsters for you while you wait!) and parsley, stirring until mixture is thickened and lobster is hot. Serve over Pastry Footballs!
