Honey Hot Chicken Wings Fit For An Ox

Matt O'Neil, the chef/owner of the Blue Ox in Lynn, makes a version of these at his restaurant. Here's the recipe:

Blue Ox Honey Hot Sauce For Wings

Dry Ingredients:

- Onion, 1/2, sliced
- Carrot, 1 chopped
- Celery Rib, 1 chopped
- Bay Leaves, 2
- Thyme, 1 bunch
- Black Peppercorns, 6
- Dark Chili Powder, 1 tbsp.
- Whole Cumin, 1 tsp.
- Spanish Paprika, 1 tsp.
- Cayenne Pepper, 1 pinch

Cook all ingredients listed above in a sauce pot until carmelized and the ingredients are sticking together. Then add:

- Dark Beer, 1 cup

Deglaze the concoction with the beer and reduce by half.

Add the ingredients below, simmer 45 minutes.

Wet Ingredients:

- Franks Red Hot Sauce, 1 quart
- Honey, 1 cup
- BBQ Sauce, 1/2 cup
- Brown Sugar, 1/2 cup
- Rice Wine Vinegar, 1/4 cup
- Sambal Oelek, 1 oz.
- Sriacha, 1 oz.
- Butter, 1 oz.

Strain. Pour some of the sauce over the wings, which you can bake or fry. Leftover sauce can be kept in refrigerator for another day.
