Sitting at the sushi bar Saturday night, eating ankimo, or monkfish liver.


"Eat someone else's liver for a change!"

Me: "Why do sushi bars serve ankimo, but never any other kind of fish liver?"

Sushi chef: "Because the other kinds don't taste good."

Ah. That makes sense.
