IQUE dry rub
Makes 1 cup
Turbinado is raw sugar with coarse, blond-colored crystals and a light, molasses flavor. It is essential in this rub because it doesn’t burn as easily as granulated or brown sugar. A mixture of white, black, pink, and green peppercorns add complex flavors.
|⅓||cup turbinado sugar|
|¼||cup kosher salt|
|3||tablespoons Spanish paprika|
|2||tablespoons chili powder|
|¾||teaspoon cumin seeds, freshly ground|
|1½||teaspoons mixed peppercorns, freshly ground|
|1½||teaspoons garlic granules|
|1||teaspoon onion granules|
|½||teaspoon chipotle powder|
1. In a spice blender or regular blender, combine the sugar, salt, paprika, chili powder, cumin, peppercorns, garlic and onion granules, and chipotle powder.
