Makes 1 cup
Turbinado is raw sugar with coarse, blond-colored crystals and a light, molasses flavor. It is essential in this rub because it doesn’t burn as easily as granulated or brown sugar. A mixture of white, black, pink, and green peppercorns add complex flavors.
⅓ | cup turbinado sugar |
¼ | cup kosher salt |
3 | tablespoons Spanish paprika |
2 | tablespoons chili powder |
¾ | teaspoon cumin seeds, freshly ground |
1½ | teaspoons mixed peppercorns, freshly ground |
1½ | teaspoons garlic granules |
1 | teaspoon onion granules |
½ | teaspoon chipotle powder |
1. In a spice blender or regular blender, combine the sugar, salt, paprika, chili powder, cumin, peppercorns, garlic and onion granules, and chipotle powder.
2. Pulse to form a fine powder. Refrigerate in an airtight container. Adapted from “Wicked Good Barbecue”
