You can’t help but want “some more’’ of these gooey toasted marshmallow and chocolate sandwiches between two graham crackers. If you like, replace the grahams with crisp, thin wafer cookies (my favorite are Belgian Jules Destrooper butter crisps). Look for long twigs or purchase 30-inch s’mores sticks, available at most supermarkets.

24 graham cracker squares or other cookies
6 ounces thin milk or bittersweet chocolate bars, broken into 12 squares
12 marshmallows

1. Prepare a fire pit or small campfire. Have on hand a few long sticks or twigs.

2. Arrange half the cookies on a large plate, placing a square of chocolate on each. Have the remaining cookies in a stack nearby.

3. Place a marshmallow at the end of each stick. Toast over the fire until softened and golden (or done to your liking). If it catches on fire, blow it out. Place the marshmallow (still on the stick) on top of the chocolate. Cover with a plain cookie, press down gently to squeeze the marshmallow, and pull out the stick. Repeat with the remaining marshmallows to make additional s’mores.
