This mixture of dried fruits (heavy on the apricots and sometimes containing nuts) is soaked in water until the fruit plumps and the water turns syrupy. Khushaf is sweet, but some cooks like it even sweeter and use apricot juice instead of water for soaking.
|1/2||cup each raisins, prunes, dried apricots, dates, and dried figs|
|1/2||cup walnuts, almonds, or pistachios (optional)|
1. In a large bowl, mix raisins, prunes, apricots, dates, figs, and nuts, if using. The bowl should be about half full.
2. Add enough cold water to almost fill the bowl. Refrigerate overnight. Mix well before serving. If you like, add a little water to make the fruits and nuts saucy.
