5 pounds chicken wing parts (about 50 pieces)

1 cup grated Monterey Jack cheese

1 1/2 cups sour cream

1 large onion

1 bunch fresh cilantro

4 cloves garlic

1/2 lemon

Salt and pepper

1 tablespoon canola oil

3/4 cup apricot preserves

1 can (28 ounces) whole tomatoes

3 cans (15 ounces) small red or pinto beans

1 1/2 canned chipotle chilies (in adobo sauce)

2 cups chicken stock

1/4 cup Sriracha or other hot chili sauce

1/4 cup honey

1 teaspoon ground cumin

2 teaspoons toasted sesame oil

1 package (14 to 16 ounces) corn tortilla chips
