Gambas al ajillo (Garlic shrimp)

Serves 4

This garlicky shrimp dish is the best-selling item on Jaleo’s menu.

2 tablespoons olive oil
2 cloves garlic, thinly sliced
1 pound large shrimp, peeled with tails intact
1 guindilla chili pepper (or your favorite dried chili pepper)
1 tablespoon brandy
Juice of 1/2 lemon
1 tablespoon chopped fresh parsley
Salt, to taste
1. In a medium skillet over medium-high heat, heat the olive oil. Add the garlic and cook, stirring often, for 2 minutes or until toasted, taking care not to burn it.

2. Lay the shrimp and chili pepper in the pan. Cook, without moving, for 2 minutes. Turn the shrimp and cook 2 minutes more.

3. Pour in the brandy and lemon juice. Cook 1 minute.

4. Remove from the heat. Sprinkle with parsley and salt. Adapted from Jaleo
