More money than you think.
Space in a good neighborhood, near your home, with a reasonable landlord attached.
A liquor license.
At least 2 months of debate about a name.
A kitchen designer.
Contractors of every stripe (but not an interior designer, not really).
Someone to dissect your business plan.
A bicycle for getting between home, restaurant, and City Hall, the three places you’ll be going to and from the most. You won’t have time for any other exercise.
