To simmer soup

Serves 6
1 | pint dried bean mix (see recipe) |
12 | cups water |
1 | medium onion, chopped |
Salt and pepper, to taste | |
1 | can (14 1/2 ounces) diced tomatoes |
1. Rinse the beans. In a large soup pot, combine the beans and 4 cups of the water. Bring to a boil; turn off the heat, and cover. Set aside for 1 hour.
2. Drain the beans and rinse.
3. In the same pot, combine the onion, salt, pepper, spice packet, tomatoes, beans, and remaining 8 cups of water. Bring to a boil, lower the heat, and cover the pot. Simmer for 1 hour or until the beans are tender. Taste for seasoning and add more salt and pepper, if you like. Karoline Boehm Goodnick
