Apple knobby cake

Serves 8

Use a mixture of Cortland and Macoun apples for this simple cake.

Shortening (for the pan)
1cup sugar
1/4cup solid vegetable shortening
1teaspoon vanilla extract
1cup flour
1/2teaspoon baking powder
1/2teaspoon baking soda
1/2teaspoon ground cinnamon
1/2teaspoon ground nutmeg
4small apples, peeled, cored, and chopped
1/4cup chopped walnuts

1. Set the oven at 350 degrees. Grease an 8-inch square baking dish.

2. In a bowl, cream the sugar and shortening using a wooden spoon. Beat in the egg and vanilla. Stir in the flour, baking powder, baking soda, cinnamon, and nutmeg. When the mixture is smooth, add the apples and walnuts.

3. Spread the batter in the pan. Bake the cake for 45 minutes. Adapted from Pam Dowse
