|1||teaspoon chopped canned chipotle pepper in adobo sauce|
|1||teaspoon adobo sauce|
|1 3/4||pounds (85 percent lean) ground beef|
|Kosher salt, to taste|
|4||strips applewood smoked bacon, cooked, each strip cut in half|
|4||ounces sharp Vermont cheddar cheese, sliced|
|4||hamburger buns, lightly toasted|
2. Prepare a charcoal or gas grill for medium-high heat or turn on the broiler. Shape the beef into four 3/4- to 1-inch-thick patties. Sprinkle with salt. Grill or broil the burgers, turning once, for 10 minutes or until they are cooked through.
3. Top each with two half-strips of bacon, then cheese. Close the grill or slide the burgers under the broiler for 1 minute or until the cheese melts.
4. Place the burgers on the bun bottoms. Spoon some chipotle ketchup on top. Cover with the bun tops. Pass the remaining chipotle ketchup. Lisa Zwirn
