Recipe for Glazed Delicata squash

Serves 6

2 Delicata squash, halved, seeded, and thickly sliced
2 tablespoons olive oil
2 tablespoons chopped fresh sage
Salt and pepper, to taste
¼ cup raw sugar

1. Set the oven at 350 degrees. Have on a hand a rimmed baking sheet.

2. In a bowl, toss the squash with the olive oil, sage, salt, and pepper. Set the rings on the baking sheet in one layer. Roast for 10 minutes, or until slightly tender to the touch. Remove and cool.

3. Turn the oven to the broil setting. Move an oven rack as close to the element as possible. Sprinkle the sugar evenly over the squash. Broil for 5 minutes, watching the pan carefully so the squash does not burn. Let stand for a few minutes. Peggy Hernandez. Adapted from Michael Scelfo
