Bracingly tart, we don't often enjoy our official state berry straight from the bog. But add a little sweetness, and the cranberry is a perfect addition to your holiday feasts and fêtes. Here are three of our favorite ways to enjoy this tangy treat.
Soaked in a simple syrup and then rolled in sugar, these bright berries look as if their covered in a dusting of Christmas snow. Perfect for a homemade hostess gift or as a cocktail garnish, sugared cranberries are easy to make. All you need is:
• 1 part cranberries
• 1 part granulated sugar
• 1 part water
• Additional superfine (or granulated) sugar for dusting
Discard any deflated or discolored cranberries and rinse. Add equal parts sugar and water to a saucepan and heat until sugar dissolves completely. Feel free to add additional flavors to the syrup, such as a sprig of rosemary, some fresh chopped ginger, or citrus peel. Make sure the syrup is not boiling, or the cranberries will pop. Pour syrup over cranberries and let soak in the fridge for a minimum of 4 hours, preferably overnight. Strain cranberries, discarding any that have popped, and then roll in superfine sugar on parchment paper. Let dry before packaging.
