DIY pantry: Pumpkin pie spice mix

DIY_pantry_pumpkin_pie_spice.jpg I am no stranger to spices. I collect them like others collect baseball cards. I bring them back from trips overseas to recreate the flavors of a place. I have so many that spice avalanches are a likely occurrence when I open my cabinet.

But one thing I don't like is buying something you can make with what you already have. Pumpkin pie spice is the biggest offender of this. If you occasionally bake, the odds are your pantry contains all the ingredients to create your own pumpkin pie spice from scratch, no trip to the store needed.

The basis of pumpkin pie spice is cinnamon, an aromatic commonly found in most kitchens. Mixed with a few other seasonal spices, such as cloves, nutmeg, ginger, allspice, and cardamom, you have pure autumn in a jar. This recipe is only a guideline; If you don't like cloves or love cardamom, adjust to taste.

Once you have your own special concoction, there are more uses for it than the requisite pumpkin pies:
• Add the blend to warm cider or wine
• Sprinkle some in to fall preserves like apple jelly, pear butter, or cranberry chutney
• Use a pinch on roasted winter squash for sides or in soups
• Dust pumpkin seeds and toast with a little salt
• Include in an ice cream base for a seasonal treat

DIY Pumpkin Pie Spice Mix
makes about 4 tablespoons

• 2 Tbsps ground cinnamon
• 1 Tbsp ground ginger
• 1 tsp ground nutmeg
• 1 tsp ground allspice
• 1 tsp ground cloves
• 1/2 tsp ground cardamom

Combine all spices in a small bowl. Store in a sealed container.
