Swank South End steakhouse Boston Chops will serve late-night burgers, seven nights a week, from 10 p.m. until 1 a.m. The $6 burger comes with government cheese, lettuce, tomato, caramelized onions, pickles, and secret BC sauce, on a toasted bun. If government cheese mystifies you, take heart: "It is a version of yellow American cheddar, though I am not entirely sure it is actually cheddar. However, it is so delicious on this burger," says chef Chris Coombs. Pair it with fries, a PBR, a booze-spiked milkshake, or Fernet. Because as any true gourmand knows, nothing tastes better with mystery cheese than Fernet.
