Chef Todd Winer tells us that his upcoming Fort Point pizzeria, Pastoral, has encountered some contracting woes and will now open in mid-December. The restaurant was originally slated to launch in September. Winer's optimistic about getting "back on track" with a new contractor and even expressed regret that Mario Batali won't open his own pizzeria around the corner as planned. "I have mixed feelings," he says. "Mario is an incredible chef, and it would've done wonders for the neighborhood and food community in Boston." But the lack of competition can't hurt, and Winer says to expect more than just wood-fired pizza at his new joint. "It's more country, rustic peasant food, made with three or four ingredients," he says. In addition to eight to 12 pizzas, he'll serve homemade pastas and small plates of squid, octopus, and chicken wings. He also has big plans for the bar program.

Though he declines to name his new bartender ("I don't want to jeopardize anyone's job," he laughs), expect a local up-and-comer with a knack for beer cocktails. "We're focusing on microbeers and local beers, and beer cocktails. We're putting in twenty taps. What's better than beer and pizza?" he asks.

About that pizza: Winer recommends the one topped with bonito flakes, lemon, and mozzarella.
