Clover opens in Burlington on June 21
Clover, run by MIT grad Ayr Muir, started in 2008 as a health-conscious fast food truck selling things like chickpea fritters and soy BLTs. Now Clover has legions of fans, a social media presence that rivals some celebrities, and brick-and-mortar locations scattered throughout town — and, at last, in the suburbs.
We're told that Clover's Burlington location launches on June 21. And here's a twist: The Burlington branch's manager and chef, Michael Sutton, used to manage the James Beard award-winning O Ya. So expect some Asian twists on the menu (kim chi, for instance). Clover has a pedigreed staff: In addition to Sutton and Muir, corporate executive chef Rolando Robledo used to work for Thomas Keller's The French Laundry. The new location is 100 Burlington Mall Rd. No need to visit the food court now.
