Onion Soup Gratinée
It takes at least two hours to cook the onions for the onion soup at Brasserie Jo. "It's all about caramelizing the onions because it brings out the sweetness," says executive chef Nicholas Calias. A few minutes under the broiler give the trio of gooey gruyère, jarlsberg, and provolone cheeses that golden, brulée look and taste.
