Eating Dynamite: Breaking the fast, breaking the fast - Apple & Walnut Salad w/Smoked Trout

Posted by Henry Santoro September 26, 2012 09:42 AM

Apple & Walnut Salad w/Smoked Trout

Breaking the fast after Yom Kippur should be easy (as the fast itself should be, as the rabbis put it). The food you prepare ought to come together quickly and burst with flavor. And since I don’t eat a lot of bagels or bread anymore, I try to steer away from the high-carbohydrate items. This salad has autumn -- and break fast -- written all over it. The touch of honey and maple syrup in the dressing (a mere hint of those carbs) adds just the right sweetness to the apples for a sweet New Year.

 3 ounces baby arugula
 3 ounces mixed salad greens
 2 unpeeled apples of your choice, cored and sliced ¼” thick
 1/3 cup shelled and toasted walnuts
 4 ounces of fresh goat cheese
 2-3 fillets of smoked trout, broken into 1-2 inch pieces
 Apple Cider Vinaigrette (recipe below)

In a large bowl, mix the baby arugula, salad greens, sliced apples, and walnuts. Add just enough of the vinaigrette to coat the greens and other ingredients. Mix well and dump onto a large platter. Crumble the goat cheese and sprinkle it evenly on top of the greens. Top it all off with the trout. Serve at room temperature.

Apple Cider Vinaigrette:

 ¼ cup apple cider vinegar
 1 teaspoon whole-grain Dijon mustard
 1 tablespoon pure maple syrup
 1 tablespoon honey
 Salt and pepper to taste
 5 tablespoons olive oil

Mix together everything except the olive oil (I like to use a wide-mouth mason or canning jar for maximum mixing of ingredients). Then, slowly add the olive oil while blending the mixture with a small whisk or stick blender. Taste for seasoning, and adjust if necessary.

NEW Mumford & Sons

Posted by Adam 12 September 25, 2012 09:21 AM

In May of 2010, a few of us here at RadioBDC were lucky enough to see Mumford & Sons perform an acoustic set in front of about 60 people at the Ames Hotel in Boston. This summer, Paul Driscoll saw the band play to thousands on a hillside in Portland, Maine. Clearly, this is a band poised for big things.

But you don't know how big.

I caught their set at the Providence Performing Arts Center and I can say without hesitation that Mumford & Sons are, quite simply, the greatest band around right now. Their talent and heart are unparalleled. Coldplay, who were in Boston last week and are regarded by many as the "world's biggest band," paled in comparison.

Crazy talk, right? You'll see. Mark my words: Mumford & Sons will sell out the Garden someday soon. In the meantime, watch "I Will Wait," the clip from the first single from 'Babel,' out today. And peep some pics from their show in Providence. And be sure to listen to RadioBDC to hear more tracks from 'Babel.'

Setting the stage at the Providence Performing Arts Center

Mumford & Sons open their set with "Lover's Eyes."

Marcus rips into "Little Lion Man."

Light show!

Highlight of the night: "Timshel" performed truly acoustically. No mics. Moved to tears.

Tuning up before the encore.

Eating Dynamite – Real Italian-style Pesto

Posted by Henry Santoro September 19, 2012 10:35 AM

Chances are you or someone you know is growing basil. There’s still plenty around, so go pick your own or steal some, and join me to make some real Italian-style pesto. Here’s what you’ll need:

- 2 cups firmly packed fresh basil leaves
- ¼ cup pine nuts
- 2 cloves garlic
- A little more than ½ cup of Extra Virgin Olive Oil
- ½ cup freshly grated Parmesan cheese (Romano is good, too)
- Fresh cracked black pepper
- Kosher (or sea) salt

In a food processor fitted with a metal blade, add the basil, pine nuts, and garlic and mix until it’s coarse-ground. Add the olive oil and pulse until it’s nicely mixed in. Dump the basil mixture into a good-size bowl and use a spatula to mix in the cheese. Season with salt and pepper. Try not to eat it by the spoonful.

You can use the pesto on pasta (hot or cold), fill hollowed-out cherry tomatoes with it, or do what I do - smear it on freshly grilled fish.

RadioBDC exclusive: Frank Turner interview (VIDEO)

Posted by Chris Rattey September 7, 2012 04:22 PM

Frank Turner calls himself a skinny half-arsed English country singer, but others might refer to him as a high-energy folk-punk-rock artist that leaves every part of him on the stage. In between a pair of Boston shows at Royale, Turner played a private acoustic set of five songs to an intimate crowd at T.T. the Bear's in Cambridge. RadioBDC caught up with him briefly immediately following the performance and asked a few questions.

Adam 12, preparing for Fenway Park, finds his 'Lot of Dreams'

Posted by Chris Rattey September 4, 2012 10:03 AM

It's been a busy couple of weeks for Adam 12 as he prepares to throw out the first pitch at Fenway Park on September 7 prior to the Red Sox - Blue Jays game. And also nerve racking.

Adam 12 had little concern about the once-in-a-lifetime opportunity, until a run-in with a random employee and a shaky practice session with Johnny L. With only a few days left before taking the hill at the hallowed ball yard, Adam 12 was looking for a miracle. From the shadows of The Boston Globe trucks off Morrissey Boulevard, an answer emerged.
