These days, the stated program at an Itzhak Perlman recital tends to feel like a warm-up for the encores. Perlman, who returned to Symphony Hall on Sunday afternoon for a Celebrity Series of Boston performance with his pianist Rohan De Silva, now routinely schedules in “additional works to be announced from the stage,’’ as Sunday’s program put it.
