A preview of new restaurants

Ken Oringer has long been a Boston chef, opening Clio in 1997, followed by Uni, Toro, K.O. Prime, La Verdad, and Coppa. This season, he teams up with resort Hidden Pond to create a restaurant in Maine. Earth features herbs and vegetables grown on the premises. Seafood and meat are local, too. Almost all of the ingredients come from within 50 miles of the resort. The restaurant is decorated in earth tones and twinkly lights; guests can also eat on a patio overlooking a garden and pond.
Earth’s menu features dishes such as asparagus with romesco sauce and a crisp-coated poached egg, fried chicken, lobster roasted in a wood oven with green curry butter, and lamb chops with stuffed squash blossoms and artichokes. There are also a few selections familiar to fans of Toro: seafood paella and grilled corn with cotija cheese. This may be a Maine restaurant, but Oringer brings a bit of Boston with him.
