Once upon a time, several food-loving 20-somethings worked together at a startup software company. One day in the office, they got to talking about Belgian pommes frites. They loved the shops in Brussels, Amsterdam, and New York. They started craving the fries, but they couldn’t find a pommes frites place in Boston. “We should open one,’’ they joked.

A short time later, they were laid off. The pommes frites shop they had talked about in jest suddenly seemed like a really good idea.

And so, after many months navigating permitting issues, they opened Saus officially on March 1. “We’re meeting a lot of great people and getting great feedback and still learning,’’ says cofounder Renee Eliah.

The cute little shop near Faneuil Hall serves made-to-order Belgian fries with a variety of sauces — from house-made mayonnaise and ketchup to the more-elaborate Saturday Night Chive, truffle ketchup, cheddar and Duvel ale, and more.

Also on the menu are Liege waffles, with or without dipping sauces such as house-made Nutella and salted caramel. And as long as you’re frying frites, you might as well make poutine, eh? Saus serves the French Canadian dish of fries topped with gravy and cheese curds.

The best part? On weekends, they’re open until 2 a.m. The only thing that tastes better than pommes frites is pommes frites in the wee hours of the morning.
