“We want to get people excited about coffee prepared in different ways,’’ says Jake Robinson, manager at Pavement Coffeehouse. The new, boutique-style cafe, in a 2,000-square-foot space in Back Bay, serves espresso drinks, drip, and pour-over coffee. Robinson says the slow bar, where several coffees and teas are prepared per order, is his “baby.’’ That’s where you’ll find different guest roasters every day. House espresso comes from Arlington-based Barismo; house drip from Atomic Cafe Coffee Roasters on the North Shore. The shop sources coffee carefully, selecting beans based on seasonal availability. All have been grown in the last 10 months and roasted within a day of delivery; none stay longer than 10 to 14 days after they’ve been roasted. Pavement has a light food menu of bagels, pastries, sandwiches, panini, and salads.
