THE BACK STORY: Serenade makes its Viennese chocolates with cocoa from Belgium, just like the amiable Austrian founder William ''Uncle Bill'' Federer did for more than 50 years. The Brookline-based candy maker does a surprising job at perfecting a wide range of chocolates, ranging from smooth creams to plump, chocolate-dipped strawberries. But the best of Serenade's collection is the Viennese truffle, a rustic-looking square of dark and milk chocolate blended with silky hazelnut butter. You can even watch the chocolates being made in the Brookline Village shop.
