He's the guy who makes the cream puffs for the Big E, the ginormous fair running through Oct. 1 in West Springfield. The pastries are the snackapalooza's signature dessert. But they're far from the only thing to eat there. One of the Big E's PR people sent the Globe a modest dining proposal, under the heading "The Big E Diet -- how to survive on 5,000 calories/day."
