Old-fashioned grits

Serves 4

2 teaspoons salt, or to taste
8 cups water
2 cups whole-grain grits
1. In a large pot, combine the 2 teaspoons salt and water. Bring to a boil.

2. Gradually stir in the grits. Let the water return to a boil. Lower the heat to a simmer. Cook, uncovered, stirring occasionally, for about 25 minutes, until the grits are cooked through and creamy. Taste for seasoning, and add more salt, if you like. John Burgess
