String cheese and avocado salad

Serves 4

2 cups very hot tap water
1/3 section of string cheese braid
1 ripe avocado, peeled and cut into cubes
1 medium ripe tomato, cut into cubes
2 tablespoons olive oil
Salt and pepper, to taste
4 pita rounds, each torn into 3-inch pieces
1. In a medium size bowl, combine the hot water and cheese. Let it sit for 3 minutes or until very soft. Remove the cheese from the water and cut into small pieces.

2. In a medium bowl, combine the avocado, tomatoes, and cut-up cheese. Add the olive oil, salt, and pepper. Toss lightly with a fork. Serve with pita. Adapted from Omar Awartani
