Spanish sauteed shrimp with garlic

Serves 4.
1 tablespoon olive oil
2 teaspoons paprika
4 cloves garlic, chopped
2 pounds wild Maine shrimp (unpeeled)
Salt and pepper, to taste

1. In a large skillet, heat the oil over high heat. When it is hot, add the paprika and garlic. Cook for 2 minutes, stirring constantly, or until the garlic is soft and translucent.

2. Add shrimp and saute over high heat, stirring, for 2 to 3 minutes or until they are bright pink and cooked through. Sprinkle with salt and pepper and serve. Let guests peel their own -- messy but good.

Wild Maine shrimp are sent to Portland to be auctioned the day they're caught. When the shellfish are delivered to Boston, you can eat them the following day.    Story
